Vegan Protein Tacos

I love Mexican quisine and I like making vegan version of quesadillas, nachos and this time, I tried making tacos.

It literally took me 10 minutes to prepare it. But I have to admit that I cheated with the corn bread as I bought them ready­čĄź

And that is okay because, we all have limited time for cooking after work. So, letÔÇÖs get to it!

Ama kendimi su├žlam─▒yorum ├ž├╝nk├╝, i┼čten eve d├Ân├╝nce yemek haz─▒rlamaya ├žok bir vakit kalm─▒yor ve bu tarz kolayl─▒klar ├žok yard─▒mc─▒ oluyor. Neyse hadi tarife ge├želim.


INGREDIENTS (110Kcal per taco):

  • 500g chestnut mushrooms, sliced
  • 1 small onion,chopped
  • 2 garlic cloves, diced
  • 1/2 green bell pepper, sliced
  • 1/2 red bell pepper,sliced
  • 1/2 cup chopped tomatoes
  • 1 tsp paprika powder
  • 1 tsp hot sauce (optional)
  • Salt and pepper
  • 2 Tbsp oil

+taco shells and nutritional yeast

For easy guacamole sauce:

  • 1 ripe avocado
  • 1 small red onion
  • 1 garlic cloves
  • Juice of 1 lime
  • Salt

1-)Place a large pan over high heat and start sweating the onions in olive oil until translucent.

2-)Add peppers and mushrooms and sautee them for 2-3 minutes and add remaining ingredients.

3-)Lower the heat let it simmer while you prepare the guacamole sauce. Scoop into a sauce bowl when ready.

4-)Add all the guacamole ingredients in a food processor and blend until creamy.

5-)Fill the taco shells and top with nutritional yeast for extra vegan goodness.

6-)Enjoy them with creamy guacamole sauce.

  • 1 tatl─▒ ka┼č─▒─č─▒ tatl─▒ toz biber
  • 1 tatl─▒ ka┼č─▒─č─▒ ac─▒ sos (iste─če ba─čl─▒)
  • Tuz ve karabiber
  • 2 yemek ka┼č─▒─č─▒ ya─č

+Tako kabuklar─▒ ve besin mayas─▒

Kolay guacamole (avokado) sos i├žin:

  • 1 adet olgun avokado
  • 1 k├╝├ž├╝k k─▒rm─▒z─▒ so─čan
  • 1 di┼č sar─▒msak
  • 1 misket limonunun suyu
  • Tuz

1-)Y├╝ksek ate┼če geni┼č bir tava yerle┼čtirip, so─čanlar─▒ zeytinya─č─▒nda saydamla┼čana kadar kavurun.

2-)Biber ve mantar dilimlerini de ekleyip, 2-3 dakika daha kavurup kalan malzemeleri ekleyin.

3-)Ate┼či k─▒s─▒p sosu pi┼čmeye b─▒rak─▒rken, guacamoleyi haz─▒rlamaya ba┼člay─▒n.

4-)T├╝m guacamole sos malzemelerini mutfak robotuna at─▒p, kremams─▒ olana kadar kar─▒┼čt─▒r─▒n. Haz─▒r olunca sos kasesine aktar─▒n.

5-)Tako kabuklar─▒n─▒ soteyle doldurup, ekstra vegan patlamas─▒ i├žin besin mayas─▒yla s├╝sleyin.

6-)Kremams─▒ guacamole sosu e┼čli─činde afiyetle yiyin.
