I am not going to talk much about it cause I think the picture speaks for itself.
You can clearly say that this week, I became obsessed with root vegetables. If you have not seen my last recipeĀ go check after this one please, it was a super yummy pumpkin spice latte smoothie bowl.
And this one happened when I needed to save 3 overripe bananas and 1 large carrot. Can wait for next weekend to make it again!
INGREDIENTS (120Kcal each):
- 3 large banana, mashed
- 1 carrot, grated
- 1/3 cup water
- 1 tsp white vinegar
- 1/2 cup flour
- 1 tsp baking soda
- 1 tsp cinnamon and nutmeg
- 1/2 tsp vanilla extract
- 1 tsp coconut oil to fry
1-)Mix the wet ingredients in a large mixing cup.
2-)Sift all dry ingredients into a separate cup and stir them into wet ingredients until smooth and creamy.
3-)Heat the pan over mid high heat and spread the oil.
4-)Add a heaped spoon of batter and fry both sides until golden brown.
5-)Serve with nut butter, maple and walnuts.
