Yet we pay little attention to this green goddess. Regardless you are following a vegan or non-vegan diet, it is essential to consume green peas on a regular basis.

Today I will share a traditional Levanter way of cooking the peas but you can also include them in your meal prep list with steamed veggies, in salads, in smoothies, or as pea puree and pea soup.

Ingredients:

To prepare this vibrant Levanter Vegan Dish 2: Green peas, gather the following ingredients:

  • 1 cup quinoa
  • 1 tablespoon olive oil
  • 1 onion, finely chopped
  • 3 cloves of garlic, minced
  • 1 zucchini, diced
  • 1 cup fresh spinach leaves
  • 1 cup of green peas
  • 1 cup fresh kale leaves, stems removed and chopped
  • 1 cup broccoli florets
  • 1 cup snap peas, ends trimmed
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • Juice of 1 lemon
  • Salt and pepper to taste
  • Fresh herbs (such as parsley or cilantro) for garnish

Levanter Vegan Dish 2: Green Peas

Instructions:

How to Prepare Quinoa:

  • The bitterness of the quinoa can be removed by rinsing it in cool water.
  • In a saucepan, combine the quinoa and 2 cups of water. Reduce heat to low, cover, and simmer for 15–20 minutes, or until quinoa is tender and water is absorbed, from the time it first begins to boil. Don’t mess with it.

Preparing the Aromatics and Vegetables:

  • Olive oil should be warmed over medium heat in a large skillet.
  • Cook the onion and garlic until they are brown and fragrant.
  • Then, throw in some snap peas, broccoli florets, kale, zucchini, and spinach for good measure. After only a few minutes in the pan, the greens should be tender and somewhat wilted.

  • As you sprinkle the ground cumin and coriander over the sautéed greens, give the mixture a good stir to ensure that the vegetables are well coated with the spices.

Simple, easy, quick yet very satisfying. This is a traditional Turkish recipe that we enjoy making, especially during the winter season. But you can make it whenever you find fresh pumpkins. Let’s get to the recipe!

INGREDIENTS (200Kcal per serving):

  • 2 kg pumpkin
  • 1 1/2 cup sugar or sweetener of choice

Toppings (optional):

  • Tahini and walnuts
  • Or Turkish creme/ashta/kaymak

2-Ingredient Pumpkin Dessert

Peel the pumpkins and slice them into chunky cubes. Wash them thoroughly, pat them dry, and place them in a large pot. Add the sweetener of choice to cover the cubes. Cover its lid and let it sit for 3 hours. Sweetener will help the pumpkin to release its water during this process. After 3 hours, start cooking on the stove at medium heat until pumpkin cubes are softened. Serve while hot or cool. You can drizzle tahini and nuts while serving. If you want to try the traditional way, you can get either Turkish kaymak or Arabic ashta from a Middle Eastern supermarket and serve it with a scoop of it. Enjoy.

NOTE: Stirring is not required while cooking.

My favorite Turkish salad. Walnuts and pomegranate sauce make a difference in taste. It is sweet, salty, and tangy. If you like to try something different this weekend, give this Turkish recipe a go. You won’t regret it!

INGREDIENTS (75Kcal per serving):

  • 3 tomatoes, diced in cubes
  • 2 cucumbers, diced in cubes
  • 1 long sweet chili, finely chopped
  • 1 bunch wild rocket, rinsed
  • 1 cup walnuts, finely chopped

Turkish Gavurdagi Salad

For the salad dressing:

  • 2 Tbsp olive oil
  • 1/2 cup pomegranate sauce or balsamic vinegar
  • 1 Tbsp sumac
  • 1/2 tsp salt

Instructions:

  • It’s time to build the salad base: Combine the tomatoes, cucumber, red onion, parsley, and mint in a salad dish and toss to combine. Toss lightly to ensure a uniform distribution of components.
  • Dollop the walnuts over the salad’s foundation and mix gently. Roughly chop the walnuts and set them aside. The walnuts add a satisfying crunch and nutty taste to the salad.
  • Dressing can be made in a separate small bowl by combining extra virgin olive oil, pomegranate molasses, lemon juice, salt, and pepper. The salad gets its tangy, slightly sweet taste from the dressing.
  • Toss the salad gently after pouring the dressing over it to ensure that the delicious dressing coats all of the ingredients. Make seasoning changes to suit your taste.
  • Marinating Gavurdagi Salad for 10 to 15 minutes at room temperature is recommended. After resting for a while, the salad’s flavors will have a chance to meld into a more harmonious whole.
